In Vallon-Dore, in the municipality of Mont-Dore, Jean-Louis Martin raises his bees and crafts his hives on his property La Butineuse, as a pioneer of beekeeping in Caledonian Province Sud. The artisanal approach yields a varied range of honeys with original flavours — lychee, niaouli, coffee in particular — drawn from the foraging trips across the floral landscapes of New Caledonia. The site also houses a museum-shop dedicated to the history of Caledonian honey, providing an educational view of the trade. Beyond hive products, La Butineuse offers fresh farm eggs.
